Crunchy Rocky Road Bars

I’ve got a friend who devotes much of her December to making wonderfuly candies with flavored fillings that are as beautiful as they are good. This is not that kind of candy. This is something that I toss together from time to time — takes about five minutes’ prep, plus some chill time, and it’s ready to munch on. You can tweak the ingredients to your specific tastes, and it’s really simple.

CRUNCHY ROCKY ROAD BARS

12 ounces milk chocolate chips

1 1/2 – 2 cups crispy chow-mein noodles (broken pretzel sticks work, too, with a little less crunch)

1/3 cup chopped pecans

1/4 cup raisins

1 1/2 cups miniature marshmallows

1. Coat an 8″ square pan with Pam.

2. Melt chocolate chips in a large microwave safe bowl, stirring every 30 seconds until smooth. Add remaining ingredients and stir until coated.

3. Scrape into pan and spread smooth. Refrigerate until firm, about 45 minutes. Invert onto a cutting board and cut into bars (a serrated/bread knife works great). Store in refrigerator.

    • Three of the four major food groups — and goes wonderfully with the fourth, Diet Cherry Dr. Pepper with a little Mexican vanilla stirred in. Yumm!
