Almond Bark Candy

This is a recipe my mother-in-law passed along when my son was a kid. She wasn’t a big cook, so we don’t have many of her recipes. This may be our favorite of them all.



2 pounds almond bark, cut in chunks

1 cup creamy peanut butter (of course, if all you have is chunky, it works fine; you just end up with more peanuts)

3 cups Rice Crispies cereal

2 cups miniature marshmallows

2 cups peanuts (salted or unsalted, your choice)

1. Melt almond bar in microwave according to package directions. Add remaining ingredients and stir until well-coated.

2. Drop by spoonfuls on wax or parchment paper and let cool completely.
